White Chocolate Cashew Energy Bars

Not going to lie, I ate about half of these bars as soon as I made them. They're just SO DARN GOOD! If you're looking for a handy sweet snack to store in the fridge or freezer then this is it. Trust me, you want to try these.

Ingredients 90g Cashew butter

60g Rice malt syrup

70g Almond flour

30g Coconut flour

40g Vegan vanilla protein powder*

25g Coconut butter A pinch of salt

40g Vegan white chocolate**

Melt your coconut butter and combine all ingredients apart from the white chocolate in a bowl. Mix well with your hands until well combined. Line a tray with parchment paper and press your mixture in. You can make your bars as thin or thick as you want depending on how big your tray is. If your tray is too big feel free to only fill up some of it and wrap the parchment paper over it and press down to create a rectangular shape. Press the mix together until you have a dense, even rectangle. Set in the fridge to chill for at least 15 minutes. Gently melt your white chocolate in a bowl over a pot of boiling water (be careful as white chocolate burns easily). Once it starts to melt take it off the heat and stir until it is all melted and can be drizzled easily over the bars. Take your bars out and cut them into your desired size. Drizzle white chocolate on top and leave to set until the chocolate has hardened.



* I used Botanika Blends cinnamon custard donut for this, feel free to use your favourite but note that some proteins may behave differently and you might need to add more coconut butter etc. if the mixture feels too dry/crumbly *I used Loving Earth for this, you can also substitute this for dark chocolate or even coconut butter if white chocolate is not available in your area
