I love anything cookie dough flavoured, and this delicious and simple cookie dough cake is definitely a must try for cookie dough lovers! Made using condensed oat milk from Nature's Charm who I'm collaborating with for this recipe, this was super sweet and decadent, and perfect for any birthday, party or just weekend treat to keep in the fridge and snack on as you'd like. I hope you give this one a go!
Ingredients: 500g all purpose flour
300g granulated sugar
100g brown sugar
2tsp baking powder
1tsp baking soda
2/3 tsp fine table salt
440g unsweetened soy milk
100g condensed oat milk
30g apple cider vinegar
100g vegan butter
Egg replacer for baking equal to 3 eggs (I used Orgran egg replacer)
2tsp vanilla extract
150g dairy free chocolate
Cookie dough frosting:
300g vegan butter
75g brown sugar
370g powdered sugar
1tsp vanilla
120g flour
Decorations: 50g chopped chocolate
Vegan cookies (Optional. I used store bought, but you can use homemade ones if you wish)
Method:
Whisk flour, brown sugar, sugar, baking powder, baking soda and salt together until fully combined. Mix soy milk and apple cider vinegar in a bowl and set aside for a few minutes to curdle. Prepare your egg replacer and add to the wet mix along with vanilla extract. Melt the butter. Add the wet mix into the dry, pour in the melted butter condensed oat milk and mix until almost combined. Chop the chocolate and add to the mixture. Mix again until fully combined and the chocolate is evenly spread throughout the batter.
Pour the batter into a rectangular cake pan (approximately 29cmx45cm) that’s been greased with a little vegan butter or neutral cooking oil or lined with parchment paper. Bake in the middle of a preheated oven at 200 degrees Celsius for 25-30 minutes or until a toothpick inserted into the middle of the cake comes out clean. Let cool completely before frosting.
To make the frosting, you first need to heat treat the flour to get rid of any bacteria. Spread it onto a baking tray lined with parchment paper and bake in the oven at 180C for at least 5 minutes until it reaches at least 75 degrees Celsius. Cool the flour completely. Then, cream together the butter, sugars, and vanilla. Add the flour and mix to combine.
Once the cake has cooled, add the frosting on top and evenly spread it out. Decorate with some chocolate chips and if you wish, some cookies. I just used some "accidentally vegan" ones from the supermarket, but you can of course go all out and make your own at home as well.
