Honestly I struggled to decide what to call these bars. They consist of a chocolate shortbread, a layer of biscoff, a peanut caramel and white chocolate. But that's all too much to put in the name isn't it? So white chocolate biscoff bars it is! Either way I highly, HIGHLY recommend them. If you ever try one of my recipes, let it be this one.
Ingredients:
Base:
60g coconut butter
50g rice malt syrup
5g cacao powder
60g almond flour
40g vegan chocolate protein powder
Pinch of salt
Caramel:
200g pitted dates
90g smooth peanut butter
20g vegan vanilla protein powder
Other layers:
140g biscoff spread/cookie butter
100g white chocolate ( I used Vego but a smooth one without almonds would be even better)
Start by melting your coconut butter and mixing all ingredients for the base well until you have an even mixture that sticks together. Press into the bottom of a loaf pan lined with parchment paper. Heat your biscoff spread in the microwave for a few seconds just until pourable. Pour over the base and leave in the fridge to set up. Then it's time to make your caramel layer. First soak your dates in boiling water for at least 5 minutes. Drain and add to a blender/food processor with the rest of the caramel ingredients and blend until smooth. Once the biscoff spread is frozzen, add the caramel to your base and set the pan in the freezer for at least two hours. Melt your chocolate in a bowl over a pot of boiling water. Take your mixture out of the pan, slice into bars and drizzle the chocolate on top. Place them on some parchment paper in the fridge to set. Enjoy!
