For Christmas I got a panini press from my boyfriend and we decided to put it to good use and make a delicious sandwich recipe for you all! This is a super easy recipe that pretty much only requires cooking a mushroom and assembling + toasting a sandwich, but oh my goodness does it deliver on the flavour. All of these ingredients just work so well together to create the ultimate cozy sandwich that you can enjoy for lunch, dinner or any other time of day. I really hope you give it a go!
Ingredients: (makes 2 sandwiches)
A baguette or similar sub-style bread
2tbsp vegan green pesto
2tbsp cream cheese
4 slices vegan cheese
8 jarred roasted bell peppers
2 large portobello mushrooms
salt and pepper
olive oil
a couple handfuls of rocket
Method: Slice your baguette/bread into your desired length, and slice down the side of the baguette almost all the way, but leaving it just connected at the one side. You know, like a sub. Slice your portobello mushroom into thick slices and cook with salt, pepper and olive oil in a pan until browned and tender. To assemble, generously spread cream cheese and pesto onto the sub. Add a few slices of vegan cheese, a handful of rocket, bell peppers and portobello mushroom slices. Spread some more pesto in the top (lid) of the sub, close it and place into a panini press (you can also chuck it in the oven for a few minutes to toast if you don't have a panini press). Slightly press down and cook until it's nice and toasty. Repeat the same process with the other sandwich and enjoy straight away after heating!
