These vegan pesto twists are made from only three ingredients and are a delicious appetizer, movie snack or side to a dinner. Easy to whip up if you've already made the pesto, and only requires a quick bake of 15 or so minutes! Get some dips and enjoy them as a party snack, or have them on the side of a salad or soup as part of a bigger meal. The choice is up to you!
Ingredients
6 sheets puff pastry (approx 10cmx18cm each)
1 batch of my Vegan Green Pesto (or a jar of a store bought alternative)
2tbsp vegan butter and seeds for brushing
Method: Thaw your puff pastry sheets at room temperature, and roll them out a bit to make them slightly thinner. I rolled mine from (10x18cm) to (13x20cm)to almost half the original thickness (this might depend on the shape and thickness of your puff pastry sheet).
Spread an even layer of pesto onto three of the sheets. Place another sheet of puff pastry on top of each and flatten. Slice into strips approximately 3cm in width and 13cm in length (the dimensions aren’t super important as long as they’re strips that you’re able to twist. If yours are a lot bigger just extend the baking time by a few minutes if needed. Twist the strips 3-5 times until tightly twisted but still able to hold their shape when put down, and place on a baking sheet lined with parchment paper.
Brush them lightly with olive oil and bake in a preheated oven at 200C for approximately 15-17 minutes or until golden and puffed up. Let cool before serving with your favourite dips, a nice salad or just eat them as is!
