Vegan Chocolate "Smarties" Cookies

Time for a delicious cookie recipe! These ones have vegan smarties, chocolate m&m's, whatever you wish to call them. I finally got my hands on some so that I could bake these (I used the brand Doisy and Dam, but you can use any you can find where you live). And oh my goodness were these delicious! I couldn't stop eating them and the whole batch was pretty much gone within a week. Even my boyfriend who "doesn't really like smarties" confirmed that these were delicious!


Ingredients:

180g vegan butter

75g brown sugar

165g granulated sugar

1.5 tbsp crushed flax seeds

5 tbsp water

230g all purpose flour

40g cocoa powder

0,25 tsp salt

1 tsp baking powder

0.75 tsp baking soda

80g chocolate "m&m's" + 30g to add on top

Method:

Mix crushed flax seeds and water to form a gloopy “flax egg”. Cream butter, brown sugar and sugar together until smooth. Add the flax egg and mix again until completely combined. Add flour, cocoa powder, salt, baking powder and baking soda and mix until almost combined. Add 80g of vegan chocolate "m&m's" to the batter and mix until incorporated. Leave the dough in an airtight container to rest in the fridge for at least 2 hours or overnight. Once rested, preheat the oven to 200C, and use an ice cream scoop to scoop the dough out onto two trays lined with parchment paper. Press another 3-4 "m&m's" into the surface of each cookie. This way the chocolate m&m's will be more visible and evenly spread out on top once the cookies have baked! Bake each tray in the middle rack of the oven for approximately 10-12 minutes. Remove the tray from the oven and leave the cookies to cool for a few minutes on the tray. After a few minutes transfer the cookies to a cooling rack until cooled completely. Enjoy!
