Just in time for Halloween - these vegan crunchy peanut-buttery bars are absolutely delicious and pretty easy to make! I've still got a batch of these stashed in the freezer to enjoy while watching a whole lot of movies on Halloween myself.
Ingredients:
150g peanut butter
50g vegan protein powder*
40g cornflakes
100g rice malt syrup
40g raw cane sugar**
200g dairy free chocolate of your choice
Mix your peanut butter, protein powder, rice malt syrup and sugar well to combine. Crush your cornflakes up a bit and add to the batter. Mix until incorporated. Press into the bottom of a loaf pan lined with parchment paper and leave to set in the fridge for a few hours. (I set mine in the freezer but do not recommend- they're much harder to slice when frozen, which explains why these are a bit more rough around the edges than my usual bars)
Melt your chocolate in a bowl over a pot of boiling water. Slice the butterfingers into your desired shape and coat in chocolate. Leave in the fridge to set and enjoy!
*Caramel or vanilla protein powders both work well here, but you could also sub for some almond flour/coconut flour and adjust the amount of liquid accordingly to get the desired texture
