It's no secret I loveee me a good sandwich. I made these buffalo style chicken sandwiches for the first time about a year ago and can't believe I'm only now posting a written recipe for them! They're definitely a staple in my household now as it's such a quick and easy lunch/dinner to throw together that still fills you up and is packed with flavour. I hope you try them out and love them as much as I do!
Ingredients (Makes 2 sandwiches)
200g vegan “chicken” style pieces
1tbsp hot sauce (I used tabasco)
1 tbsp melted vegan butter
1/2tsp smoked paprika
salt and pepper to taste
4 leaves lettuce
4 slices of bread
10 thin slices cucumber
“Ranch-style dressing”
100g Vegan sour cream/creme fraiche (I used the oatly creme fraiche)
1tsp dijon mustard
1 clove minced garlic
1 sprig fresh dill - chopped
1 sprig fresh parsley - chopped
2tsp apple cider vinegar
salt to taste
1tsp sugar
Method
Cook the chicken in a drizzle of oil until slightly crispy and heated/cooked all the way through. Mix the hot sauce and melted butter in a bowl and toss the chicken in the mixture until all chicken pieces are coated. Season to taste with salt and pepper. Mix all ingredients for the dressing in a separate bowl. Spread a generous layer of dressing on each slice of bread. Onto two slices of bread, add lettuce and cucumber before piling half of the "chicken" on top. Place the final two slices of bread on top and you have your sandwiches ready to eat! Enjoy.
