Vegan BLT Sandwich

A classic in the sandwich world, the BLT is a must-have in any sandwich lovers repertoire. And don't fret, even if you're vegan, vegetarian or just doing veganuary you don't have to give it up! I love me a good vegan BLT, it's fairly simple to make and so dang delicious. I hope you all give it a go and love it as much as I do!


Ingredients: 250g extra firm tofu

4 slices of bread

4-5 leaves of lettuce

1 large tomato

3-4tbsp vegan mayonnaise

salt and pepper


Marinade: 50ml soy sauce

10ml olive oil

0.25 tsp ground pepper

4tsp granulated sugar

0.5 tsp smoked paprika

0.25tsp garlic powder

Method:

Thinly slice the tofu into rectangles. Mix everything for the marinade in a shallow bowl. pat the tofu slices dry with a clean towel or paper towel. Add the slices to the marinade, toss to coat and leave for about 30 minutes. Add to a pan with a drizzle of oil and cook on low heat for about 20 or so minutes until most of the water has evaporated. Add salt to your own liking at the end. Wash your lettuce, slice your tomatoes and bread. On one slice of bread add 1-2 tbsp mayo and half of your lettuce and some tomato slices. Add salt and pepper to the slices of tomatoes before adding on half of your tofu bacon. Butter a second slice of bread and place on top. There's your first BLT! Do the same with the two remaining slices of bread to create the second sandwich. Enjoy!
