Working full time through the summer months has me craving all the refreshing, tropical make-ahead breakfasts and these overnight oats are just PERFECT for warm and busy summer mornings! As always I hope you give them a go and remember to tag me @mealsbymiri if you do so I can see your creations!
Ingredients:
40g oats
40g banana
100g unsweetened soy milk
7g chia seeds
2tbsp coconut yoghurt
Toppings:
1 passion fruit
½ kiwi
1tsp shredded coconut
1tbsp coconut yoghurt
Method: Mash your banana and add to a jar with the oats, soy milk, chia seeds, and coconut yoghurt. Mix everything well and leave in the fridge overnight. Transfer to a bowl the next day, top with passion fruit, kiwi, coconut yoghurt and shredded coconut.
