Those of you who know me know I can never get enough of cookies, and it's probably my favourite thing to bake. These might actually be my favourite cookies that I've ever made, as they remind me of my favourite cookies that I used to get at Tesco the year I lived in England. I would literally have a pack of them for lunch several times a week haha. If you've ever tried the Tesco's finest triple chocolate cookies you know what I'm talking about. And if not, well you've just gotta try these and find out what the hype is about!
Ingredients:
120g vegan butter
60g brown sugar
100g granulated sugar
1 tbsp crushed flax seeds
3 tbsp water
155g all purpose flour
30g cocoa powder
0,25 tsp salt
0.75 tsp baking powder
0.5 tsp baking soda
80g vegan white chocolate
40g vegan dark chocolate
Method:
Mix crushed flax seeds and water to form a gloopy “flax egg”. Cream butter, brown sugar and sugar together until smooth. Add the flax egg and mix again until completely combined. Add flour, cocoa powder, salt, baking powder and baking soda and mix until almost combined. Chop white and dark chocolate, add to the batter and mix until incorporated. Leave the dough in an airtight container to rest in the fridge for at least 2 hours or overnight. Once rested, preheat the oven to 200C, and use an ice cream scoop to scoop the dough out into 11 equal sized balls onto one-two baking trays lined with parchment paper. Bake each tray in the middle rack of the oven for approximately 10-13 minutes. Remove the tray from the oven and leave the cookies to cool for a few minutes on the tray. After a few minutes transfer the cookies to a cooling rack until cooled completely. Enjoy!
