I've been on a Cookie baking mission lately and have been testing heaps of different recipes, and I think it's finally time to share the first one with you! These chocolate cookies have both vegan white and milk chocolate in them and they're just soo gooey and delicious. I totally recommend giving these a go, and you can always change it up and add in any of your favourite brands/flavours of chocolate in them as well!
Ingredients: 50g butter
40g brown sugar
40g white sugar
0.5 tbs flax seeds + 1.5tbsp water
a splash of vanilla extract
70g flour
10g cocoa powder
a pinch of salt
0.25 tsp baking powder
15g vegan white strawberry chocolate (I used one from the brand Rawries Wholefoods)* 15g vegan milk chocolate (also Rawries Wholefoods)*
*feel free to use whichever brand you have access to! Regular vegan white chocolate will also do the job if you can't find a strawberry flavoured one.
First, combine flax seed sand water and leave to set. Cream together your butter and sugars until white and fluffy and stir in the vanilla and flax egg. Add your flour, cocoa powder, salt and baking powder and combine. Then, roughly chop your chocolate and fold in. Transfer to an airtight container and leave to rest for about 24 hours. The day after, scoop out your cookie dough into little balls, flatten a little wit the back of your hand and sprinkle on some salt on top. Bake at 200 degrees C for about 12-15 minutes. Leave to rest on the tray for 2-3 minutes before transferring to a wired rack to cool completely.
