If you're looking for a way to level up your french toast this recipe is a must try. This french toast sandwich is stuffed to the brim with one of my favourite sandwich combos: fresh strawberries and chocolate! As always the recipe is fully vegan. It's perfect for summer, chill weekends at home or even as an afternoon sweet snack. Ingredients:
15g chickpea flour
30g granulated sugar
a pinch black salt*
100g plant based milk
1 tsp vanilla extract
2-4 slices of stale white bread
2tsp vegan butter
*Black salt isn't essential but does provide the "eggy" flavour. You can sub with some regular salt if you don't have it though.
Filling: Sliced strawberries
Chopped vegan chocolate
Toppings:
Chopped chocolate
Sliced strawberries
Maple syrup
Vegan whipped cream
Method: Blend chickpea flour, sugar, black salt, plant based milk and vanilla until smooth, pour into a shallow dish. Heat a pan to medium heat and add some vegan butter. On both slices of bread, spread some butter and spread on strawberries. Sprinkle a handful of chopped chocolate on one slice of bread. Fold the other slice of bread over the one with chocolate to make a strawberry chocolate sandwich.
Once the butter has melted, dip your sandwich into the french toast mixture until coated on both sides. Cook in the pan until golden on both sides and the chocolate is fully melted inside. Serve with fresh strawberries, vegan whipped cream, chopped chocolate and maple syrup.
