Strawberries and Cream porridge

Strawberries with sugar and cream takes me straight back to the summers of my childhood and this recipe is my attempt to recreate this summery snack as a filling and delicious breakfast. It's simple to make and is the perfect dessert-for-breakfast option, especially during strawberry season! I hope you all love this as much as I did.


Ingredients: 40g quick oats

200g unsweetened soy milk

40g mashed banana

1tsp maple syrup

vanilla

1/4tsp cardamom

a pinch of salt


Toppings:

about 100g strawberries

a wedge of lemon

1-2tsp maple syrup

a splash of vegan cream


Start by slicing up your strawberries into chunks and adding to a bowl. Drizzle over the maple syrup and juice of your lemon wedge. Mix well and set aside. In a pot, add all ingredients for the oatmeal and simmer until it reaches your desired texture. Transfer to a bowl, top with the strawberries and a splash of vegan cream. Enjoy!
