Speculoos, Spekulatius, Speculaas, wherever you're from or whatever you call them, these cookies were something I didn't discover until I went vegan. Back when I lived in Norway I used to travel to Berlin a lot for holidays where I would always do a huge snack haul and bring heaps of vegan products with me back home. One of these things were speculoos cookie butter. It is 100% a jar of magic and I discovered later that the cookies with the same name are just as delicious. They're similar to gingerbread in a sense, however they are less molasess-y (is that even a word?) and also have the addition of cardamom (which I LOVE). Whether you're a fan of the original cookies or not I highly recommend giving this oatmeal recipe a go. It's packed with warming spices which are sure to warm your soul lift your spirits.
Ingredients:
40g quick cooking oats
30g mashed banana
250 plant milk or water (plant milk makes it creamier.. obviously)
5g caramel protein powder (can sub for a combo of brown sugar and maca powder)
Pinch of salt
¼ tsp of each of these spices:
-Cinnamon
-Ginger
-Cloves
-Cardamom
-Grated nutmeg
Add all your ingredients to a pot and bring to a simmer. Boil for a few minutes until it reaches desired texture. Pour into a bowl and top with your favourite toppings, I love adding peanut butter, maple syrup, seeds + granola and berries to mine. I’m sure raisins or choc chips would be delicious too!
