Let's face it, snickers is basically the perfect flavour for any breakfast food. And with this in mind, it's honestly shocking that I haven't made snickers flavoured pancakes before now! This stack is a fabulous combination of caramel pancakes with peanuts and chocolate on top, and is so so good. Give it a go and let me know what you think by tagging me @mealsbymiri on Instagram!
Ingredients: 90g all purpose flour
20g vegan salted caramel protein powder
1/4tsp baking soda
1tsp baking powder
12g sugar
180ml soy milk
1tsp apple cider vinegar
pinch of salt
Toppings: Choc chips
Peanut butter Chopped peanuts
Maple syrup
Method:
Mix apple cider vinegar and soy milk and set to curdle for a minute or so. In a separate bowl/container, mix flour, protein powder, baking soda, baking powder, salt and sugar. Pour the wet mix into the dry and stir until just combined. Add a few tbsp of the mixture per pancake into a non-stick pan (use oil/butter as needed to prevent sticking) and cook on medium high heat until bubbles start to form or the pancake starts to set around the edges. Flip the pancake and cook until it’s all cooked through. Repeat until you’ve used up all the batter. Stack the pancakes up high, add your toppings and enjoy!
