I love my skillet pancakes as I'm sure you all know, but I just realised the other day that I never made a basic vanilla skillet pancake recipe for you all! So, here it is. The perfect base to add any mix ins or toppings you might want. Would love to see you all get creative with this so tag me @mealsbymiri so I can see your skillet pancake creation!
Ingredients:
25g whole wheat flour
35g all purpose flour
15g vegan vanilla protein powder
30g mashed banana
130g soy milk
1tsp apple cider vinegar
1/2tsp baking powder
1/4tsp baking soda
pinch of salt
*if using unsweetened soy milk, add 1tsp of sugar/maple syrup as well
Method: Mix the flours, protein powder, baking powder, baking soda and salt in a bowl. Mix the soy milk and apple cider vinegar and set to curdle for a few minutes. Then, add the mashed banana to the wet mix and mix well. Pour the wet ingredients into the dry and stir until just combined. Pour into a lightly greased mini skillet (Approximately 9cm in diameters) and bake in a preheated oven at 200C for 12-15 minutes. Remove from the oven, add your favourite toppings and enjoy!
