Oh cookies, I love them, you love them, and I can't stop won't stop coming up with new recipes for them! These s'mores cookies are so fabulous and filled with fun and exciting textures. From crunchy biscuits to melty chocolate to gooey marshmallows, this cookie is a treat no matter what the first bite contains! Ingredients:
180g vegan butter
100g brown sugar
140g granulated sugar
1.5 tbsp crushed flax seeds + 3 tbsp water
270g all purpose flour
0,25 tsp salt
1 tsp baking powder
0.75 tsp baking soda
80g vegan chocolate chunks
50g vegan marshmallows
50g crushed digestive biscuits/graham crackers
Method: Cream together brown sugar, granulated sugar and butter in a bowl. Mix ground flax seeds and water and let set for a few minutes. Then, add the flax mix to the butter mix and whisk until fully combined. Add salt, baking powder, baking soda and flour and mix until almost combined. Add choc chunks, marshmallows and biscuit pieces. Fold until all is fully combined. Cover and set in the fridge to rest for at least 2 hours. Use an ice cream scoop to portion out balls of dough on a tray lined with parchment paper (I baked mine in two batches/used two trays). Bake each tray of cookies in a preheated oven at 180C for about 15 minutes. Let cool for a few minutes on the tray before transferring to a wire rack to cool completely.
