This delicious vegan brownie is fudgy and packed with all sorts of textures! Gooey marshmallows, crunchy graham crackers and melted chocolate chunks. This is the perfect garden party, movie night or game night snacks. Really I would argue this brownie is perfectly suited for all sorts of occasions! Ingredients
150g dark vegan chocolate
100g unsalted vegan butter
3 tbsp (45ml) ground flaxseed + 9 tbsp (100ml) water
100g brown sugar
200g granulated sugar
40g cocoa powder
160g all purpose flour
1 tsp salt
½ tsp baking powder
1tsp vanilla extract
Mix-ins:
70g chocolate
35g mini vegan marshmallows
25-30g graham crackers
Method:
Start by combining your flax meal and water and leave to rest for a few minutes. Melt your chocolate and butter in a bowl over a pot of boiling water. Whisk your flax mixture in with your sugars and gradually add your salt, vanilla and chocolate + butter mixture. Sift cocoa powder, baking powder and flour and fold into the wet mixture. Add the brownie batter into a square 20x20cm pan lined with baking paper. Spread the mix-ins/toppings evenly across the brownie and press them slightly into the batter to avoid them falling off during baking. Make sure the final brownie is level. Add to a preheated oven and bake at 200C for approximately 20-25 min or until a toothpick comes out clean(ish) (obviously there will be loads of melted chocolate chips in the brownie but do your best to see if it’s mostly cooked through. Shorter baking time will result in a softer and more gooey brownie, so feel free to adjust baking time to your liking.
