Rice Paper Rolls with a Peanut Dipping Sauce

I figured it was time I shared my recipe for my ultimate summer dinner: rice paper rolls! So fresh and vibrant, these are always a joy to eat. This recipe makes 4 rolls, but is super easy to double or triple if you're cooking for friends or family! The peanut sauce is a rather simplified version of the Indonesian satay-sauce, however it definitely still delivers on taste while keeping things pretty pantry friendly! If you already have a go-to peanut sauce recipe you want to stick to however, there is nothing stopping you, your food, your rules. Either way, enjoy!


Marinated tofu:

150g extra firm tofu (½ block) 1.5tbsp soy sauce

1tbsp Ketjap manis

1tsp sesame oil

Rice paper rolls:

8 sheets rice paper

1 avocado

4 large leaves baby cos lettuce

60g red cabbage

75g cucumber

70g carrot

50g dry vermicelli noodles

2tsp soy sauce

½tsp sesame oil


Peanut Sauce: 2 tbsp peanut butter

1 tbsp red curry paste

2 tsp soy sauce

1tsp rice malt syrup

2tbsp water

Mix it all together and u know that its the best of both worlds


To make the tofu:

Slice your tofu into 4 sticks and press out the most of the water between two clean kitchen towels. Combine the ingredients for your marinade in a shallow dish and add the tofu. Coat the tofu well and leave to marinade for 10 minutes. Preheat your oven to 200 degrees and bake the marinated tofu for 20 minutes. Flipping and adding another layer of marinade halfway. Cook the vermicelli in boiling water until soft. Rinse in cold water and add ½ tsp sesame oil and 2 tsp soy sauce and mix well.


Fill a large dish with cold water and place a rice paper roll into the water and soak until softened. Place on a flat surface such as a large plate. Repeat with another rice paper and place it on top of the first. cut of any hard stems on your cos lettuce leaf and place it in the middle of and across your rice paper (stem going from left to right). Place the rest of your ingredients on top of the leaf along the stem of the cos lettuce (make sure to not overfill your rolls!). Fold in the two sides and roll from the bottom to close the rice paper roll. Cut in half if you want with a lightly oiled knife, but this is totally optional! Mix up all the ingredients for your dipping sauce and serve.
