Did someone say a cute valentines day breakfast for you and a loved one/best friend/family member/you x2?? I got you, these raspberry chia pudding parfaits couldn't possibly be any cuter, and they're honestly so simple to make! And there is absolutely NO SHAME in turning this recipe into one large parfait for you to eat in bed by yourself while watching a movie on the 14. February this year. Seriously, do it.
Ingredients:
50g chia seeds
200g plant based milk
60g raspberries
1tsp vanilla extract
2tsp maple syrup
50g vegan chocolate
approx 1/2-1 cup coconut yoghurt to serve
approx. 1/2-1 cup granola to serve
some mint leaves and strawberries berries
Method:
Mash your raspberries, and in a large bowl or jar, combine the berries with chia seeds, plant milk, vanilla and maple syrup. Stir well and leave to soak overnight. Melt the chocolate and drizzle along the rim of a couple glasses to serve (you can also drizzle on the inside of the glass or on top of the pudding depending on your preference) and set the glasses in the fridge for the choc to harden. If you have some chocolate left over feel free to make some chocolate covered strawberries to go on top! Give the chia pudding a good mix to ensure it has thickened evenly and layer in the glass with the hardened chocolate along with granola and coconut yoghurt. Top with your mint and berries and share with your valentine (or eat it all for yourself, win win!).
