Did anyone say they wanted the recipe for the PERFECT fall breakfast? No? Well I don't care I'm giving it to you anyways. These pumpkin spice waffles are soft, warming and perfectly spiced to give you all the cozy vibes you need this fall season.
Ingredients:
80g all purpose flour
30g whole wheat flour
70g pumpkin puree
30g brown sugar
190g regular sweetened soy milk (can use an unsweetened version too and add more sugar)
1tsp baking powder
a pinch of salt
1tsp cinnamon
1tsp ginger
¼-½ tsp nutmeg (depending on how much you like nutmeg)
1/2tsp allspice
1/4tsp cloves
*add more sugar to taste if your soy milk isn’t very sweet
Method: Mix soy milk, brown sugar and pumpkin puree together. In a separate bowl, add all the other ingredients and mix well to combine. Add your wet mix to the dry and fold together. Grease your waffle maker and add about 1/4 of the batter per waffle (the exact amount will depend on the size of your waffle maker). Cook until there is little to no steam escaping from the side of your waffle maker. Carefully open the waffle maker and remove the waffle. If you find the waffle is splitting close the waffle maker again and cook for a few more minutes before removing. Let the waffles cool before topping with granola, chocolate, banana, nut butter and a drizzle of maple syrup. Enjoy!
