I love pumpkin spice and I love skillet pancakes, so why not combine the two into my first pumpkin-themed recipe of this years spooky season? It may not be fall in Australia but that's not going to stop me from getting into the pumpkin spice mood, and I hope wherever you are you give this one a go too!
Ingredients:
50g spelt flour
10g protein powder (I used a coffee flavoured one but you can use whatever you like or substitute with some more sweetener and flour)
5g brown sugar
1tsp baking powder
0,5 tsp cinnamon
0,25 tsp ground cloves
0,25 tsp freshly grated nutmeg
0,5 tsp ground ginger (spice powder, not the fresh kind)
50g pumpkin puree
80g plant milk
Mix all your dry ingredients before adding the pumpkin puree and milk and folding in until combined. Grease a mini-skillet, add the mixture and bake at 200 C until cooked through (poke with a toothpick and it should come out clean, this took about 15-20 minutes for me). I served mine with maple syrup, biscoff spread, coconut yoghurt, chocolate and fruits, but feel free to add whatever toppings you like!
