Happy Halloween month my friends. I think it was about time I posted a pumpkin spice themed recipe, so here it is.
This pumpkin spiced granola is super tasty, customisable and very easy to make, so there's no excuse not to try making it it really.. it makes a fairly small batch so feel free to double or triple the recipe as you see fit.
Ingredients: 80g rolled oats
15g coconut flakes
20g pumpkin seeds
25g almonds
8g coconut oil
50g rice malt syrup
35g almond butter
1/2 tsp cloves
1/2 tsp ginger
1 tsp cinnamon
1/2 tsp allspice
1/4tsp freshly grated nutmeg
a good pinch of salt Start by adding all of your ingredients apart from the almond butter, coconut oil and syrup into a bowl and mix well. Melt your coconut butter and stir it in with the almond butter and rice malt syrup in a separate bowl. Pour the wet ingredients into the dry and mix until completely combined, feel free to add some more syrup if needed to fully coat all your ingredients. Pour onto a baking sheet lined with parchment paper and flatten into a disc. For smaller clusters you can spread it out on the sheet, but I prefer breaking it apart after baking. Bake for about 1-1.5 hours at 150C until the granola starts to go slightly golden brown. Leave to cool before breaking it up and adding it to a jar. Feel free to skip/sub any ingredients you don't like and add in whichever nuts + seeds you might have on hand, get creative!
