I do love me a good waffle, especially when it has a bit of wholemeal flour and protein powder in it to make it a more breakfast-y and less dessert-y! A dessert-y waffle for breakfast is fabulous on the weekends, but I do tend to feel better during the day if I have something that keeps my blood sugar a bit more stable ;) Whether it's a weekend or a weekday where you are, these are delicious as both a snack and a meal, and I hope you give them a go!
Ingredients:
70g all purpose flour
50g wholemeal flour
30g protein powder
10g melted vegan butter
30g granulated sugar
230g soy milk
1tsp baking powder
0.5tsp vanilla extract
a pinch of flaky sea salt
Toppings: Vegan yoghurt, strawberries & maple syrup.
Method: In a bowl, combine both flours, protein powder, sugar, baking powder and salt. In another, combine soy milk, butter and vanilla. Add the wet mix into the dry and whisk until just combined. Preheat your waffle maker. Lightly grease it and spoon in your mixture. The amount required will depend on the size and shape of your waffle maker. Cook on medium heat until you can open the waffle maker without the waffle separating (this is roughly once there isn't as much steam coming out of the sides of the waffle maker). Remove the finished waffle and repeat until you have used up all the batter. This should make about 4 waffles. Top with vegan yoghurt, fresh strawberries and maple syrup and enjoy!
