I mostly use protein powder for the flavour rather than adding a substantial amount of protein to my diet. However, I got a request from a friend of my boyfriend to make a recipe for banana pancakes with more protein powder than what I normally include and since I don't get a lot of specific requests for recipes of course I jumped right on it! This recipe has a full scoop of protein powder per stack, which is twice as much as I normally include, and it still tastes totally delicious! Ingredients: 40g vanilla protein powder (I used Macro Mike)
60g flour
80g banana
150g soy milk
1tsp baking powder
a pinch of salt *sugar to taste if your protein powder and soy milk isn’t very sweet
Method: Mix protein powder, flour, baking powder and salt well. Mash your banana and add to the dry mix along with soy milk. Mix until just combined. To a greased pan over medium heat add about 1/5 of the mixture per pancakes and cook until golden on both sides. Top with peanut butter, banana, chocolate and maple syrup and enjoy!
