Pecan Pie Protein Pudding

(ad) I love pecans and have always wanted to make a pecan pie themed recipe for this blog. When Veego reached out to me and wanted to make a recipe together on my Instagram I was thrilled and figured this was the perfect time. These tofu pudding pots are everything I dreamed and more. If you're craving pecan pie and can't be bothered making a whole pie this is sure to hit the spot.


Ingredients Pudding:

300g silken tofu

30g Veego salted caramel protein powder

20g maple syrup

20g almond butter

a pinch of salt Caramellised pecans: 75g pecans

25g maple syrup

0.5 tsp cinnamon

a pinch of salt

Other toppings: coconut yoghurt/coconut whipped cream, almond butter


How to:

Mix the pecans with maple syrup, cinnamon and salt and spread on a baking sheet lined with parchment paper. Bake for 12-15 minutes at 175 degrees C and leave to cool completely.

Add all the ingredients for the pudding into a blender and blend until completely smooth. Chop up your pecans and layer the pudding in a jar (or two small jars) with the chopped pecans, some additional almond butter and some coconut yoghurt or coconut whipped cream. Enjoy!
