I LOVE baked oats and was loving the baked oatmeal trend on Instagram that was happening mid 2021. However, I'm notoriously late to the party when it comes to trends so this is the first time since then that I've gotten around to making some cute single-serve baked oats. This recipe makes two single serve baked oatmeal cups, however you can of course just use a bigger ramekin and make a bigger portion, or halve the recipe. Up to you!
Ingredients
80g oat flour
14g cocoa powder
80g banana
1tsp baking powder
100g plant based milk
a pinch of kosher salt
10g sugar
2 spoonfuls of peanut butter for the center (+ more on top?)
Toppings: More peanut butter
Fresh berries
Coconut yoghurt
A chocolate square
Method:
Add all ingredients to a blender and blend until smooth. Fill two oven-safe dishes until half full, add a spoonful of peanut butter and fill them up using the remaining batter. You can fill them almost to the top but leave just a cm or two for the mug cakes to rise without overflowing. Bake the mug cakes at 200C for 10 minutes in the oven. Remove the cakes and let cool for a bit, add your toppings and enjoy!
