I'm pretty sure I'm far from the only one who's gotten really into baking while in iso. So to all of you looking for new recipes to try out, here's a super tasty muffin recipe that's super easy to make and actually pretty nutritious!
Ingredients: 300g spotted bananas
80g peanut butter
1 tbsp ground flax seed
1/2 tbsp apple cider vinegar
1tsp vanilla
50g raw sugar
200g soy milk
30g protein powder (optional, use whichever flavour you prefer)
130g whole wheat flour
120g all purpose flour
2tsp baking powder
1/2 tsp baking soda
1 pinch salt
Choc chips/blueberries to mix in
Make your flax egg by combining your ground flax seeds with 3tbsp water and set aside.
Mash your bananas and whisk together with the peanut butter, apple cider vinegar, raw sugar, soy milk, protein powder and vanilla. Add your thickened flax egg and whisk again.
Sift in your two flours, baking powder and baking soda and add your salt. Whisk until almost fully combined. Add your mix-in of choice. I used an 80g block of dark chocolate but you can also use nuts or berries. Mix again until they're evenly dispersed.
Add your batter to a muffin tray lined with parchment paper or muffin liners, filling almost to the top. Bake for 5 minutes on 250C before reducing the heat to 175C and baking for another 25 minutes or until a toothpick comes out clean.
Serve with more peanut butter (obviously).
