Inspired by my favourite sweet treat at my favourite place in the whole world, Nutie in Sydney. I haven't had these since 2019 and since I'm now living on the other side of the world I figured I had no other choice but to take the matter into my own hands and try and create my own version at home. Now let me be honest. Is it as good as the original? No. So if you want the full experience head to Sydney and pay Nutie a visit. Is it tasty replacement that'll keep me somewhat sane until I can get back to visit them in Australia? Absolutely. If you're in the same situation as me or just wanna see what the fuss is all about give this recipe a go! It's pretty easy and only requires a few simple ingredients.
Ingredients:
10 marie biscuits
5tbsp peanut butter*
5tsp raspberry jam
200g vegan chocolate
*A smooth peanut butter with some added oils and sugars etc is best here, you don't want it to be too runny as that'll make assembly much harder.
Method
Spread peanut butter on 5 of the biscuits, evenly distribute it and make a well in the centre that fits about 1 tsp of jam. Add the jam to the middle and place another biscuit on top, making 5 PB&J biscuit sandwiches. Place these in the freezer for a couple of hours. Melt the chocolate and dip the now cold biscuits in the chocolate to completely cover them. Drizzle some of the leftover chocolate and top and place in the fridge to set completely for a few hours.
