Yeah I did decide to stick with the pancake cereal trend way after people stopped talking about it but hey, can you blame me? These little mini pancakes are so cute and super fun to eat, so I definitely think they're worth the extra time involved in cooking them! This bowl is kind of like a yoghurt and granola bowl, but with mini pancakes instead of the granola. I don't know about you but I think that sounds delicious. And well, I can confirm it was.
Serves 2 people
Ingredients:
100g spelt flour
170g unsweetened plant milk
1tsp baking powder
1tsp cardamom
1tbsp (20g) sugar
To serve: approximately 200g vanilla yoghurt
maple syrup
blueberries
almond butter
Mix flour, sugar, cardamom and baking powder well until combined. Add the plant based milk and mix until no dry patches of flour are left. In a non stick pan spoon in about 1tsp batter per mini pancake and cook until bubbles start to form and the pancakes start to cook around the edges. Flip and cook on the other side and then transfer to a bowl. Repeat until you have used all the batter. Serve the pancakes with yoghurt, maple syrup, blueberries and almond butter. Enjoy!
