I know pancake cereal is an old trend by now but I'm voting that it stays as a classic. These mini buckwheat pancakes aren't really that much extra work compared to the usual pancake stack, yes there's a bit more spooning of batter involved but I think the enjoyment derived from eating them out of a bowl with toppings makes up for it!
Ingredients
80g buckwheat flour
0.5tsp cinnamon
1.5tsp baking powder
20g protein powder (BSC caramel)
170g plant milk
1tsp sugar
Whisk it all together until smooth and spoon in about 1tsp of pancake batter per pancake into a pan. Flip once they start to cook through and add to a bowl with all of your favourite toppings!
