Norwegian Rice Porridge

Feeling festive? If not this meal is sure to put you in the Christmas spirit. Traditional Norwegian Rice Porridge is mainly eaten during Christmas at large family gatherings or "juletrefest" aka large Christmas parties. Traditionally the person cooking the porridge will make a huge batch and hide a single almond to the pot before serving. The person who gets the almond wins a price, which is usually a marzipan pig! I will personally make this any time of year, but I figured December would be the best time to share my recipe with you all. Hope you enjoy!


Ingredients: Serves 2

150g white short grain rice

700g coconut milk (light unsweetened)

1tsp vanilla essence

a pinch of salt

2 tsp sugar

Toppings: Vegan butter

Sugar Cinnamon


Add all your ingredients to a pan, cook for about 50 minutes or more until the rice is completely soft and the porridge has reached a thick, creamy texture. You may want to add water or more coconut milk as it cooks and thickens, this will depend on how thick your coconut milk is, how much of it evaporates as you cook and a few other factors. Serve with vegan butter, cinnamon, sugar and any other toppings you might want.
