These pancakes are totally delicious and perfect for summer. I'm determined to make the most of my last summer in Australia and as such I'm making mango recipes like never before. These are totally delicious and I highly recommend giving them a go!
Ingredients:
90g spelt flour
20g protein powder
0.5tsp cardamom
60g mango flavoured coconut yoghurt*
130g plant milk
5g lemon juice
1tsp baking powder
0.5tsp baking soda
Toppings: Fresh mango, coconut butter, maple syrup and passion fruit.
Mix plant milk, coconut yoghurt and lemon juice well (feel free to use a blender) and set aside. Whisk your dry ingredients together in a bowl, add the wet mixture and fold until combined. Cook 1/5 of the batter at a time in a preheated non-stick pan at medium heat. Once bubbles start to form at the top and the edges begin to set and look slightly golden, flip the pancake and finish cooking on the other side. Serve with fresh mango, coconut yoghurt, maple syrup and passion fruit. I also added some coconut butter and that was delicious! *you can also use a mix of mango puree (Blended fresh mango) and regular plain/vanilla coconut yoghurt.
