This toastie is the perfect meal for when you feel like having something cozy and warming that's also packed with beg, protein and other kinds of good stuff! I used wholemeal bread for this one to make it extra filling and nutrient dense, but you can of course use whichever bread you want. It features melty vegan cheese, juicy tomato slices, glazed tofu packed with flavour, slightly charred zucchini and fresh spinach for a delicious and nutritious lunch, dinner or snack.
Ingredients (makes one sandwich)
2 slices of your favourite bread
2-4 slices of vegan cheese
a bunch of spinach
½ tomato
Vegan butter
5 slices zucchini (approximately 1/3cm thick) Glazed tofu (recipe below)
Glazed tofu 75g extra firm tofu
20g soy sauce
5g sugar
5g water
0.5tsp olive oil
a good pinch of pepper
Method
Slice the tofu into approximately 1/3cm thick slices and cook in a pan with a drizzle of olive oil until golden on both sides. Mix soy sauce, sugar, water, olive oil and pepper in a bowl until dissolved. Turn the heat down and pour the mixture onto the tofu and cook on low-medium heat until the tofu is all coated and sticky.
For the rest of the sandwich:
Cook the zucchini slices in a little oil over high heat until somewhat charred on both sides and fully cooked through. Slice your tomato into approximately ⅓ cm thick slices. Butter two slices of bread add the spinach, tomato, tofu and zucchini to one slice of bread, add another few slices of cheese and place the final buttered slice on top, buttered side down. Use a pan with a lid or a panini press to cook the sandwich over medium heat until the cheese is melted, slice it in half and enjoy!
