I'm all about lemons these days and so of course I had to make a lemon themed baked oatmeal dish! The one on the photo was my trial batch and so the final result didn't have as many poppy seeds, so if yours look sliightly different to what's pictured, don't fret, it's probably supposed to be that way! Other than that this is a fairly straight forward recipe so let's get into it shall we?
Ingredients
120g quick oats
25g vanilla protein powder
7g poppy seeds
215ml soy milk
30g sugar
3tbsp lemon
zest of 1 lemon
1tsp baking powder
a pinch of salt
Method
Blend the oats into oat flour and transfer to a bowl, add the rest of the ingredients and mix to combine. Transfer to an oven safe baking dish and bake for 15 minutes in a preheated oven at 200C. Let cool before serving with some coconut yoghurt and fresh berries. Enjoy!
