After making some delicious easter themed crepes topped with lemon curd last month I decided I had to put this lemon curd to other uses as well. And so I made these delicious chia pudding parfaits! The chia pudding itself is so easy to make so this is a great way to use up some of that left over lemon curd. This recipe makes more lemon curd than needed for this chia pudding, so feel free to halve the lemon curd recipe if you wish.
Ingredients (1 large or 2 small portions): Granola/muesli of choice Lemon curd: 100g lemon juice
1tbsp lemon zest
130g full fat coconut milk
1tbsp butter
170g caster sugar
1 pinch turmeric
2tbsp cornstarch
2tbsp water
Chia pudding: 80g chia seeds
300g soy milk 1tbsp maple syrup
1tsp vanilla extract
Method:
Start by making the lemon curd. Mix all ingredients except cornstarch and water in a saucepan and bring to a simmer.
Combine cornstarch and water into a slurry and slowly pour in to the saucepan while whisking. Keep the curd simmering while whisking for 5-10 minutes to thicken. Transfer the curd into a jar and store in the fridge until serving.
Make the chia pudding by combining chia seeds, soy milk. maple syrup and vanilla extract until fully mixed. Set in the fridge overnight. The next morning, layer the chia pudding with granola in a glass and top with lemon curd. Enjoy!
