Ingredients 170g unsweetened plant milk
10g lemon juice
70g whole wheat flour
15g vanilla protein powder (Can sub for 10g flour + 1-2 tsp sweetener of choice + 1/2 tsp vanilla)
a pinch grated nutmeg
1/2 tsp cinnamon
1/4 tsp allspice
¼ tsp ginger
a pinch of salt
1tsp ground flax seeds
¼ tsp baking soda
1tsp baking powder
Start by mixing your plant milk and lemon juice and leave to curdle. Whisk together your flour, protein powder, spices, flax seeds, baking soda and baking powder. Add your wet mix to your dry and fold until all the flour is incorporated (a few lumps are okay!). Heat up a non-stick pan and spoon in about 1.5 tbsp of the mixture per pancake. Once bubbles start to form, flip and cook through on the other side. This batter should make about 6-7 pancakes. I topped mine with some coconut yoghurt, almond butter, maple syrup, berries and granola but feel free to use whatever you have on hand!
