These are soo incredibly easy to make but such a great movie snack that I decided I had to share it with you so you can all experience the magic that are these Biscoff cups and peanut butter cups too! This recipe makes 3 Biscoff cups and 3 peanut butter cups, but feel free to make as many of each as you want, or just do one of them, up to you.
Ingredients: 200g vegan milk chocolate
4 tbsp crunchy(or smooth) Biscoff spread
4 tbsp peanut butter (I prefer the sugary processed kind for this as it's the most similar to what you would find in the original non-vegan peanut butter cups)
6 muffin liners
Method: Simply melt your chocolate in a bowl over a pot of boiling water. If you know how to temper chocolate feel free to do that!
Grab a muffin liner and add a spoonful of chocolate to the bottom. Tilt your muffin liner so the chocolate starts covering the sides, and keep swirling the chocolate around until you have a thin layer covering about 1-1.5cm all around the sides of the muffin liner. Repeat with all 6 liners and set in the fridge to harden. You should have used about half of your chocolate at this point, leave the rest on a low heat (stirring occasionally) or just heat it up when you need it if it begins to set up during this process. Add your Biscoff and peanut butter to two separate bowls and microwave for a short wile until runny and pourable. DON'T do this if using natural peanut butter, it will not melt in the same way but go all hard and clumpy on you.
Then, spoon in Biscoff and peanut butter into the liners with the now hardened chocolate until it just about reaches the top of the chocolate around the sides. Leave to set for a bit more in the fridge. Finally, spoon in chocolate to cover the filling completely and leave in the fridge for at least a few hours. Remove from the muffin liners and enjoy!
