Summer and warm weather always has me craving burgers and these hoisin burgers are my new obsession. Big shoutout to my boyfriend for coming up with the recipe, this was actually his creation and it is just to die for. I really hope you give these a go and love them as much as I do!
Ingredients: 2 vegan mock meat burger patties
cucumber slices
a few sprigs of coriander
a few tsp sesame seeds
2 burger buns,
sweet potato fries/any other side you wish
Marinade: 3tbsp Soy sauce
3tbsp vegan hoisin sauce
4tbsp water
Coleslaw: 1/2tsp Wasabi paste
70g red cabbage
55g carrot
2tbsp vegan mayo
1tsp Apple Cider Vinegar
a pinch of salt
1tsp sugar
Cook the burgers until heated through. Mix water, soy sauce and hoisin sauce in a shallow dish and place the cooked burgers in the marinade for about 30 minutes.
To make the coleslaw, simply mix vegan mayo, wasabi, apple cider vinegar, salt and sugar in a bowl. Shred some red cabbage, slice your carrot in to super thin strips (or use a peeler to make ribbons) and toss in the coleslaw dressing. Leave in the fridge while you finish the burgers.
Once the burger patties have finished marinating, place them back in the pan with some sesame oil and cook until crispy while spooning on more of the marinade as you wish, in order to add more flavour. Toast your buns and add the coleslaw to the bottom. Add a burger patty and sprinkle on some sesame seeds. Add some sliced cucumber and coriander before placing the lid on top. Serve with some sweet potato fries or any other side you like and enjoy!
