This recipe is somewhere in between a high protein snack and an indulgent dessert. I've added some extra nut butter and protein powder to this slice to make it slightly more nutritious than just your average hedgehog slice, but note that the main ingredients are still biscuits and chocolate, so do with that what you will. A few years ago I tried my friend Michelle's (Run2food on Instagram) recipe for a hedgehog slice and that was the first time I ever tried this delicious dessert. Now a few years later I decided it was time I tried making a hedgehog slice recipe for myself and I think it turned out pretty darn good, despite not having access to the same delicious peanut butter and vegan chocolate that I used back when I lived in Australia hehe. Wherever you are in the world though I hope you give this a go!
Ingredients
The slice:
200g vegan chocolate
55g vegan chocolate protein powder
60g smooth peanut butter
20g vegan butter
100g chopped marie biscuits
Chocolate topping layer:
100g vegan chocolate
20g smooth peanut butter
Note: I used a chocolate with about 60% cocoa in this, but if you want to use a darker variant that is fine too.
Method:
Melt 200g vegan chocolate and the butter in a bain marie (place in bowl over a pot of boiling water) while stirring. Remove from the heat and add peanut butter and protein powder. Stir to combine. Chop marie biscuits and add to the bowl, stirring again until all the biscuit pieces are coated. You want a fairly rough chop here so that the slice has some texture to it. Line a loaf pan with parchment paper and pour the mixture in. Leave in the fridge to set for about 1 hour. Melt 100g chocolate for the top layer and mix with 20g peanut butter. Pour on top of the now set hedgehog slice and spread evenly. Place back into the fridge until all of the chocolate has hardened and slice into your desired shape. Enjoy!
