Cinnamon rolls and gingerbread. Could there possibly be a better combination? These are just as easy to make as regular cinnamon scrolls, all you need to do is add a few more spices to the filling! I also highly recommend making the cream cheese frosting to add on top. It is optional but oh so delicious. These are the perfect treat whether you're wanting something comforting to eat for the weekend or you're having guests over. The ultimate treat for feeling nice and cozy while getting into the holiday spirits!
Ingredients: Dough
500g all purpose flour
2tsp dry yeast
300g unsweetened soy milk
50g dairy free butter
60g granulated sugar
1.5 tsp cardamom
0.5 tsp fine table salt
Filling 1.5tsp cinnamon
1tsp cloves
1tsp cardamom
1.5tsp powdered ginger
150g brown sugar
100g butter
Cream cheese frosting 140g vegan cream cheese
70g vegan butter
230 powdered sugar
25 corn starch/corn flour
Method:
Mix yeast, all purpose flour, sugar, salt, and cardamom in a bowl. Melt the butter in a saucepan and add soy milk to the butter. Bring to body temperature before pouring into the dry mix and kneading until a smooth dough has formed. Cover and leave to rest for at least 1-2 hours.
Once risen, knock the air out of the dough and add to a lightly floured surface.
Using a rolling pin, roll the dough into a rectangle about 35x50cm, spread on butter, sprinkle on sugar and the spices for the filling. Roll the dough starting at one of the shorter edges, until it has formed a 35cm long log, slice the dough into 12 equal segments and place each scroll into an oven safe dish lined with parchment paper. Rest for another hour under a damp kitchen towel or cling film. Place the dish into a preheated oven at 180C for about 25 minutes or until the scrolls are golden and cooked through. Remove and leave the scrolls in the dish to cool. Make the frosting by adding your vegan cream cheese to a bowl, whipping until smooth, adding the butter, whipping again, and then gradually adding corn starch and powdered sugar until you have a smooth cream cheese frosting. Spread onto the scrolls once they have cooled completely. Optional: you can also sprinkle the scrolls with some crushed gingerbread cookies for decorational purposes!
