I'm all about taking a bit of extra time to make a proper cozy and delicious treat for breakfast during the festive season. This Gingerbread french toast definitely hits the spot as it is both sweet, delicious, warming and christmassy all at once! It also isn't overly complicated to make. I hope you love this recipe as much as I did!
Ingredients 30g chickpea flour
30g granulated sugar
1tsp nutritional yeast
a pinch black salt (this provides the eggy flavour)
20g molasses
1/2 tsp cinnamon
1/2 tsp powdered ginger
1/4 tsp allspice
1/4 tsp cloves
1/4 tsp nutmeg
200g plant based milk
1tsp vanilla extract
2-4 slices of stale bread
Method
Blend all ingredients except from the bread until smooth, pour into a shallow dish. Heat a pan to medium heat and add some vegan butter. Once the butter has melted dip your slices of bread into the mixture until coated on both sides. Cook in the pan until golden on both sides and serve with powdered sugar, maple syrup, granola, nut butter and berries. Enjoy!
