One of my favourite christmas flavours is eggnog. Even though it's not a drink I grew up with I've grown to love the eggy-nutmeg flavoured drink over the past few years and now I just can't stop making eggnog-themed recipes! These waffles are super yummy and great for a festive brunch or breakfast. I hope you love them as much as I did!
Ingredients:
Makes approx. 4 waffles
100g all purpose flour
50g whole wheat flour
15g melted vegan butter
30g granulated sugar
225g soy milk
1tsp baking powder
1tsp vanilla extract
a pinch of flaky sea salt
a pinch of black salt (the kind that tastes eggy and smells like sulfur)
1/2tsp freshly grated nutmeg (or more to taste)
Toppings: Fresh berries
Custard or coconut yoghurt
Chopped nuts
Method:
Mix your flours, sugar, baking powder, nutmeg, black salt and salt in a bowl. In a separate bowl, combine the soy milk, melted vegan butter and vanilla. Pour the wet mix into the dry and whisk until just combined. Lightly grease your waffle iron and cook about 1/4 of the batter per waffle in a lightly greased waffle maker. You’ll know it’s almost done once there’s not as much steam escaping from the sides. Try to lift the waffle maker to see if the waffle lets go of the sides, if it does it’s done (make sure it’s as golden as you want it though, feel free to cook for a few more minutes if you think it’s too pale). If the waffle starts to split, let it cook for a few more minutes before trying to open again.
Serve the waffles with some custard or vanilla coconut yoghurt, cherries, powdered sugar and walnuts - and of course, add a generous drizzle of maple syrup.
