If you're looking for a festive breakfast idea then look no further! These eggnog flavoured pancakes are fully vegan and perfect for your Christmas morning brunch. The subtle nutmeg and cinnamon adds a nice warmth to the sweet and fluffy pancakes and these are sure to have you feeling festive and cozy in no time.
Ingredients: (serves 1-2 people depending on how hungry you are)
100g all purpose flour
20g vegan vanilla protein powder
1tsp baking powder
20g granulated sugar
190ml soy milk
1tsp apple cider vinegar
½ tsp freshly grated nutmeg ¼ tsp cinnamon
A pinch of black salt (this provides the eggy flavour, so if you sub with regular salt be aware of this!)
Toppings: Vegan whipped cream
Maple syrup
Chopped walnuts
Cinnamon
Method:
Combine soy milk and vinegar and set aside to curdle. Whisk together flour, protein powder, baking powder, sugar, nutmeg, cinnamon and black salt. Add the wet mix into the dry and stir until just combined. Into a non-stick or greased pan over medium heat, add about 1.5-2tbsp batter per pancake. Cook until bubbles start to form or the edges are looking slightly set. Flip the pancake and cook until cooked through and golden on both sides. Remove from the pan and repeat until all of the batter has been used up. Stack your pancakes and top with whipped cream, walnuts, chocolate, a sprinkle of cinnamon and a drizzle of maple syrup.
