What's better than chocolate pancakes? Double chocolate pancakes. And trust me this stack is one you absolutely need to try at least once in your life. These vegan pancakes are perfect for those weekends when you're craving an extra decadent and sweet breakfast.
Ingredients
50g all purpose flour
40g whole wheat flour
20g vegan chocolate protein powder
10g cocoa powder
1/4tsp baking soda
1tsp baking powder
12g sugar
190ml soy milk
1tsp apple cider vinegar
35g vegan choc chips/chopped dark chocolate
a pinch of salt
Toppings: nut butter, banana, coconut yoghurt and chopped chocolate
Method: Start by mixing soy milk and apple cider vinegar. Set aside to curdle. Mix flours, protein powder, cocoa powder, baking soda, baking powder, salt and sugar in a bowl until well combined. Add the curdled soy milk to the dry mixture and stir until almost combined. Add the choc chips and fold again until just combined. Cook about 1/6th of the mix per pancake in a non-stick pan at medium heat until it starts to set around the edges and/or bubbles start to form on top. Flip and cook until cooked all the way through. Repeat the process until you've used up all your batter. Stack the pancakes and top with nut butter, coconut yoghurt, banana and chocolate, and of course a generous drizzle of maple syrup.
