I usually start craving "wholesome" breakfasts around the holidays as I usually feel like I want to balance out all of the candy and sweets and desserts with something that feels a bit more nutritious. A filling overnight oatmeal parfait like this one definitely hits the spot for me and I hope it does for you too if you're in the same boat as me during the holidays! I'm all for enjoying all the sweets and desserts, but in my case it's only really enjoyable as long as I make sure to also get some proper meals in between all the treats ;) And not to mention, these taste like eggnog which makes them the perfect breakfast for Christmas day or any other day during the festive season, so I hope you give them a go and love them as much as I do!
Ingredients
40g quick oats
10g chia seeds
170g soy milk
½-1tsp grated nutmeg
a pinch cinnamon
1tbsp maple syrup (or more if you're using an unsweetened milk)
a pinch of black salt
Layer with: Blackberries
Coconut yoghurt
Fresh blueberries
Granola
Nut butter
Method: Mix all ingredients for the overnight oats together in a bowl, adding maple syrup to taste. Cover and let it soak over night. The morning after, assemble the parfait by layering the soaked oats with blackberries (frozen ones thawed in the microwave work great but you can also mash some fresh ones), nut butter, coconut yoghurt, granola and blueberries. Enjoy!
