It's chocolate, it's peanut butter and it's all assembled in a fluffy stack drenched in maple syrup. What more could you possibly want? I also made this one with buckwheat flour, so my gluten free friends can enjoy this one too!
Ingredients: 80g buckwheat flour
20g vegan chocolate protein*
1tsp cocoa powder
1tsp sugar
1tsp baking powder
a good pinch of salt
160g plant milk
Combine all ingredients except from the milk in a bowl before adding the milk and whisking well until you have a smooth batter. Buckwheat is gluten free so you cannot over-develop the gluten in this, so mix as much as you want or even use a blender! Spoon in heaped tablespoons into a pan on medium heat and cook on both sides until done. Serve with heaps of peanut butter, banana and berries! And of course, finish off your stack with some maple syrup.
*you can use whatever flavour protein you think will go well in this , or just skip it and add a bit more flour and sugar to adjust
