Easy peasy, no fuss, vegan chocolate pancakes for your cooking pleasure. These are a perfect dish to whip up for Sunday brunch, special breakfast occasions, or mornings where you're just really craving chocolate. Ingredients
60g all purpose flour
40g whole wheat flour
20g vegan chocolate protein powder
20g cocoa powder
1/4tsp baking soda
1tsp baking powder
25g sugar
220ml soy milk
1tsp apple cider vinegar
a pinch of salt
Method
Start by mixing soy milk and apple cider vinegar. Set aside to curdle. Mix flours, protein powder, cocoa powder, baking soda, baking powder, salt and sugar in a bowl until well combined. Add the curdled soy milk to the dry mixture and stir until almost combined. Spoon in a few tablespoons of batter per pancake in a non-stick pan at medium heat until it starts to set around the edges and/or bubbles start to form on top. Flip and cook until cooked all the way through. Repeat the process until you've used up all your batter. Stack the pancakes and top with all your favourite toppings.
