I mean, any good food blogger should have a fabulous chocolate chip pancake recipe in their repertoire, right? Soo I figured it was about time I made on for the blog. Here it is, the most delicious, fluffy stack of vegan choc chip pancakes! I hope you love it as much as I do.
Ingredients:
50g all purpose flour
50g whole wheat flour
1tbsp granulated sugar
1tsp baking powder
0.25tsp baking soda
120ml soy milk
1tsp apple cider vinegar
40g chocolate chips
0.5tsp vanilla
Method:
Mix soy milk, vanilla and apple cider vinegar. Set aside to curdle. Mix flours, baking soda, baking powder, salt and sugar in a bowl until well combined. Add the curdled soy milk to the dry mixture and stir until almost combined. Add the choc chips and fold again until just combined. Cook about 1/6th of the mix per pancake in a non-stick pan at medium heat until it starts to set around the edges and/or bubbles start to form on top. Flip and cook until cooked all the way through. Repeat the process until you've used up all your batter. Stack the pancakes and top with nut butter, coconut yoghurt, banana and chocolate, and of course a generous drizzle of maple syrup.
